QUICK AND EASY SALMON SALAD

OVER THE LAST COUPLE MONTHS I HAVE EMBARKED ON A LIFESTYLE CHANGE. I FIND MYSELF COMING BACK FREQUENTLY TO CERTAIN MEALS THAT ARE EASY AND FAST AND DON’T BREAK MY CALORIE BANK. THIS IS MY VERSION OF A RECIPE I STOLE FROM A RESTAURANT CALLED NORTH. IT’S MY GO-TO ITEM WHEN I EAT THERE AS IT IS THE LOWEST IN CALORIES ON THE MENU.

RECIPE:

1-1.5 CUPS ARUGULA (ORGANIC) 8 CALORIES

FILET OF SALMON THIS ONE WEIGHS IN AROUND 5 OZ 202 CALORIES I ONLY SEASON WITH A QUIRT OF LEMON JUICE, SALT, PEPPER, & PARSLEY- I COOK MY SALMON AT 350 DEGREES FOR ABOUT 20-25 MINS.

1/4 OF AVOCADO DICED 80 CALORIES

1 TBSP GRATED PARMESAN CHEESE 10 CALORIES

FOR DRESSING:

1 TEASPOON ORGANIC EVOO *HIGH QUALITY* 40 CALORIES

2 TBSP FRESH LEMON JUICE 8 CALORIES

SALT & PEPPER

TINY PINCH OF SPLENDA THIS IS OPTIONAL, YOU COULD ALSO USE A SWEETENER OF YOUR CHOICE; THIS TAKES THE BITE OUT OF THE LEMON. ZERO CALORIES

WHISK DRESSING INGREDIENTS POUR OVER ARUGULA, ADD AVOCADO & PARMESAN CHEESE. TOSS UNTIL ALL GREENS ARE COATED AND SERVE WITH COOKED SALMON ON TOP.

CALORIES: 348 THIS WILL CHANGE ACCORDING TO SIZE OF SALMON FILET. I WEIGH ALL MY MEATS TO KNOW EXACTLY HOW MUCH I AM EATING.
