Low calorie cheese Tortellini Soup
I recently tried a Cheese Tortellini soup that I found on Pinterest. I played around with the recipe and added a couple of things. This was so much tastier than I even expected! Easy and quick to make. I really enjoyed it and will definitely make this again.
CHEESE TORTELLINI SOUP
Ingredients:
1 Package Refrigerated Tortellini (I used Buitoni Mixed cheese Tortellini) 20 oz pkg I only used 1/3 of the package
1 Can Roma Tomatoes (I use San Marzano) 28 oz can
1.5 Tbsp Extra Virgin Olive Oil
1 Yellow Onion finely chopped
6 Cloves Garlic minced
10 Cups Chicken Broth (You can use low sodium if you choose)
1 Tbsp Italian Seasoning
1 Tbsp Sun-dried Tomato Paste
3 Tbsp of fresh Basil (fresh Basil is better than dried for this recipe)
1 Tbsp Parsley (fresh or dried)
9 oz Spinach Chopped fresh
1/2cup celery finely diced
1/2 cup carrots finely diced
Salt & Pepper to taste
3/4 cup finely shredded Parmesan cheese for serving. (Optional)
Instructions:
Heat olive oil over medium heat, add onion and sauté 5-6 mins. Add garlic and sauté another 30 seconds or so.
Pour in chicken broth, salt, pepper and Italian Seasoning & bring to boil.
Add tortellini and cook as directed on package.
Stir in tomatoes, spinach, basil and cook until wilted.
Serve warm with Parmesan cheese on top.
963 Calories for entire pot of soup. This makes approximately 6-8 cups.
160 per cup.
*That is not counting if you add the Parmesan cheese to top it off.
