Cafe Riazor's Salad Dupe

I follow everything NYC including the Instagram account for Cafe Riazor, a Spanish Tapas Bar on West 16th in Manhattan. About a week ago when they posted their “Ensalada Mixta” with oil and vinegar my mouth started to water. I knew I had to create my own version.
We use a ridiculous amount of processed salad dressings here in America whereas the rest of the world seems to take a simpler approach; and a healthier one as well. Sometimes it’s just a drizzle of good quality Extra Virgin Olive Oil and other times it’s Olive Oil and Vinegar.
Being the Olive Oil snob that I am, I believe you get what you pay for, and I am always on the lookout for exceptional Olive Oil. I found it in a company called Brightland. They make high quality authentic Olive Oils & Vinegars from California and ship them right to your door. They even sell the spout that fits perfectly into the bottle. It’s the little things after all.
They also carry two of the best vinegars I’ve ever had. I truly cannot go back to any other Champagne Vinegar or Balsamic after having theirs. They are so fresh and robust. Honestly, you just have to try them!
So here is the recipe to my super simple new favorite summer go-to salad.
RECIPE:
Equal parts Spring mixed greens/chopped Romaine lettuce
1/4 cup sliced carrots
1/4 cup sliced cucumber
1/8 cup slice white onions (you can always add more to taste)
2 radishes sliced thin
1 Tbsp Brightland Arise Basil Olive Oil
1 1/2 Tbsp Brightland Parasol Champagne Vinegar
1/2 Tsp dried oregano
Pinch of salt, pepper to taste
I literally put everything in a large bowl add in the oil, vinegar and seasonings, and mix with wooden salad spoons. That’s all! It’s healthy, it’s simple, it’s flavorful. What more could you want?
